Colours, aromas, flavours, textures. The relationship between humans and food is a sensory experience. This is not limited to the concept of nutrition but represents diversity, affordability, territory, accessibility and safety.
A healthy diet should be varied and balanced in energy intake. However, despite the abundance of the planet’s resources, agrifood systems do not always guarantee that all people have access to products and foods that promote their well-being.
Lefay Vital Gourmet is the culinary concept that has been developed alongside the creation of the Lefay brand. It is a philosophy that is primarily ethically oriented and that prioritises sustainable agricultural practices, thereby paying homage to the Earth and its products. That’s why we are committed to protecting the environment and getting the most out of every product, with the involvement of our Guests and our Staff.
Our first priority is to implement measures that reduce food waste. This enables us to save valuable resources such as land, water and energy. The respect for the value of social and environmental sustainability is also reflected in the Resorts’ procurement policy, which selects suppliers with qualifications, certifications, or references in eco-friendly projects, as well as with local headquarters to give priority to 0-km products, thereby reducing the impact of transport emissions and promoting regional development (turnover benefiting local suppliers, i.e. in the areas surrounding the Resorts, represents 66% of the total).
The recipes in all our restaurants are based on respect for the seasonal cycle and the health aspects of food, with a focus on the Mediterranean diet, in which extra virgin olive oil is the protagonist.
A commitment that is expressed in different ways in each of the Resort’s restaurants: in particular, the gourmet offerings are designed with a strong sustainable identity. The “Grual” restaurant in Pinzolo offers a menu that celebrates the excellence of the Trentino region, while “Gramen” located on Lake Garda serves fish and vegetable dishes without meat. Finally, the Lefay SPA menu is free of gluten and dairy products and uses prebiotic ingredients.
All these promises are based on the belief that food can become food for the soul. They are the hallmark of Lefay’s philosophy and growth, and are reflected in the choice of each product. We hope that this approach will set an example and be adopted by other luxury hotels and restaurants.
